Venison Stew Recipe!

I hope everyone is enjoying the Fall weather! It is getting chillier outside everyday, so what better thing to make for dinner then some good stew!? I absolutely love soup on a Fall day, and this venison stew recipe I’m going to show you today is the perfect way to use up that abundance of venison in your freezer! Here is what you need to make this perfect for Fall meal!

Ingredients:

1 lb. venison stew meat

1 Tbsp. olive oil

2 and 1/2 cups diced potatoes, I left the skin on (about 3 medium sized potatoes)

2 cups diced carrots

1 cup diced celery

1 large onion, diced

2 garlic cloves, minced

2 tsp. Italian seasoning

1 tsp. salt

3/4 tsp. black pepper

1 15 0z. can diced tomatoes

4 cups unsalted beef broth

3–4 dashes Worcestershire sauce

One you have gathered all these ingredients we are ready to construct this tasty stew!

First, start by making sure all your stew meat is in nice bite-sized chunks, being sure to remove any of the silvery sinew tissue. Leaving this on makes the meat tough. The continue on and add the olive oil to a large pot, and heat the oil over medium heat. Once the oil is hot, allow the venison to sauté for approximately 5-7 minutes or until the edges of your stew pieces start to brown, then remove the meat from the pot and set it aside. Next turn the heat down to medium and add the potatoes, carrots, celery, and onion. Allow the vegetables to sauté for about 8-10 minutes, or until they've begun to soften. The next step is where we add all the mouth-watering flavors! Add the garlic, Italian seasoning, salt and pepper and let the potatoes, vegetables, and seasoning all cook together for an additional minute before adding the tomatoes, broth, and Worcestershire sauce. Then, add the venison back to the pot, stir it well and bring the stew to a boil. Once a boil is reached, turn the heat to low, cover the pot with a lid, and allow the stew to simmer for 1-2 hours until the venison is tender. After the correct time has passed, your homemade stew is ready to be served! Of course it is best served warm, and I would definitely recommend some fresh bread to go along with your warm tasty dish! Apple Cider Grilled Pork Chops

I know I can’t be the only one who is just ecstatic for the upcoming Fall season! One specific reason that Fall is my favorite time of year is all the wonder flavors that come with the season! Fall recipes are the best! There are so autumn flavors to tap into, and the seasonal treat that is always at the top of my list has got to be apple cider, hands down! Using the strong apple flavor in all recipes from sweet to savory makes any dish delicious. This recipe I’m sharing with you couldn’t be more perfect for this time of year! We still have some nice nights for grilling, however they are winding down so try this recipe before it gets too chilly to use your grill! Apple cider grilled pork chops?! Here are the ingredients you need to prepare this delicious dish.

Of course start with 1 - 1 1/2 lbs boneless pork chops. You can get these here at Miller’s Meat Market! Keep our bulk price in mind!

  • SPICE RUB:

  • 2 Tbsp brown sugar

  • 2 tsp chili powder

  • 1 tsp garlic powder

  • 1 tsp salt

  • 1 tsp fresh thyme minced (can substitute 1/4-1/2 tsp dried thyme)

  • 1/2 tsp pepper

  • 1 Tbsp olive oil

  • CIDER GLAZE:

  • 1 1/2 cups apple cider - Try the Burrville Cider we carry here at Miller’s!

  • 1/4 cup maple syrup - We have local maple syrup on our shelves as well!

  • 1 Tbsp grainy Dijon mustard

  • 2 tsp orange zest

  • 1/2 tsp crushed red pepper flakes

  • 1/2 tsp salt

Now follow these directions to perfectly make these porkchops! Is your mouth watering yet thinking about those delicious fall flavors? Maple syrup and apple cider, I don’t think you can go wrong!! You begin this recipe by combining all of the cider glaze ingredients into a small saucepan, and whisking to combine all the components. Keep the glaze over the heat and bring it to a low boil, once this step is achieved reduce the heat to LOW and let the glaze simmer. Now it is time to preheat your grill to medium/medium -high heat. Then add all the spice rub ingredients to a small bowl and stir to combine, the mixture should start to resemble a dry paste. Next, take your dry pork chops and rub each one with the spice rub mixture, be sure to really massage it into the meat for the best results in flavor. Once the grill is hot, place your chops on the grill. Brush each chop with the sauce that has been simmering, and grill for about 4 minutes or so. Then flip each piece of meat over, and brush that side with your cider glaze. Grill that side for approximately 4 minutes as well. Continue to generously brush the chops with the glaze as they cook, and once they are cooked remove them form the grill and to a plate to rest for a few minutes. Finish your dish by drizzling the chops with the remaining sauce and sprinkle with fresh thyme before serving.

Now THAT is the perfect September meal!

The Creepy Hollow Sandwich!

A Darrell Miller Specialty!

A Creepy Hollow sandwich? Sounds interesting, doesn’t it!?

This recipe was developed and named on a Miller family camping trip, and continues to be one of their favorite midnight summer meals. The sandwich was named at our local campgrounds, Happy Hollow! Happy Hollow is a wonderful place to spend time with your family and enjoy those bright summer days that are always followed with warm evenings that can be spent snacking around the camp fire. But what’s the best thing to snack on is the question at hand. Well, Darrell recommends and introduces the Creepy Hollow Sandwich to you all!

One evening at Happy Hollow camp grounds, this specialty sandwich was being prepared. That same weekend, one of the friends accompanying the Miller’s on their camping weekend revealed that they had the campgrounds name wrong all along. This fellow had thought that they were camping at “Creepy Hollow”… soon after he was corrected that this was not a creepy place to camp, but a family-friendly, pleasant, and perfectly HAPPY place. From that weekend forward the sandwich was titled Creepy Hollow. By now you’re probably wondering, what is this sandwich?

Well allow me to explain.

The sandwich is a high stack of savory goodness, and will fulfil any late night campfire cravings.

Here is what you need!

The Creepy Hollow:

Bread

Thinly sliced Ribeye Steak - (currently $19.99/lb at Miller’s Meat Market)

Bacon - ($6.99/lb at Miller’s Meat Market)

A1 Sauce

Lettuce

Tomato

Onion

Cheese

Pretty simple ingredients that combine together and make a delicious sandwich. Once you have your sliced steak cooked to perfection, and your bacon has been cooked to a crisp over the campfire, you begin to assemble. Pile your bacon and steak onto a hamburger bun, or use some toasted bread. Once you have all the meat you desire on your sandwich, continue adding flavor by letting cheese melt over the steak and bacon, then add onion, lettuce, and tomato to your liking. Once you have your stack of fresh flavor, you can’t forget to tie the whole thing together with A1 steak sauce. Juicy steak paired with bacon and other summertime flavors, doesn’t that sound delicious!? Surely nothing is more amazing than that combination, and if you prepare it around a fire with the ones you love it’s bound to be ten times better!

Well there you have it, a new summer night craving cure!

Clams - Tomato Broth & Garlic Mayo

Summer cookouts have to be one of my favorite things in the world. It is so special to be in a large group with people you care about, and spending time with one another! There are so many different options for on you cookout menu! Chicken, steak, kabobs, hotdogs & hamburgers, but the list doesn’t end there, not even close! This summer try something a little different, and enjoy some delicious clams with your friends and family! I think clams are such a fun option, they can be made in so many different ways and be enjoyed in between visiting with those around you. If you aren’t sure how to use clams in a tasty way, I have you covered, here is a new delicious way to prepare clams! At Miller’s Meat Market you can purchase 100 clams for $70, or if you are having a large get-together you can get 200 clams for $115. Here is what you’ll need for this tasty dish.

Ingredients:

½ lemon

5 garlic cloves, 1 whole, 4 thinly sliced

1/2 cup mayonnaise

Kosher salt

1/4 cup plus 3 Tbsp. extra-virgin olive oil

2 large shallots, thinly sliced

½ tsp. crushed red pepper flakes

2 Tbsp. tomato paste

2 cups cherry tomatoes

1 cup dry white wine

36 clams, scrubbed

6 Tbsp. unsalted butter, cut into pieces

3 Tbsp. finely chopped chives

4 thick slices country-style bread

Directions:

1.) Prepare a grill for medium heat. Finely grate zest from lemon half into a small bowl, then squeeze in juice. Finely grate the garlic clove that was left whole into bowl and mix in mayonnaise. Season garlic mayo with salt and set aside.

2.) Place a large cast-iron skillet on grill and heat ¼ cup oil in skillet. Add the sliced garlic, shallots, and chile and cook, stirring often, until just softened, about 2 minutes. Add tomato paste and cook, stirring often, until paste darkens slightly, this should take about 1 minute. Add tomatoes and a pinch of salt and cook, still stirring occasionally, until tomatoes soften and release their juices, this should take about 4 minutes. Add wine and cook until it is almost reduced by half and no longer smells of alcohol, this should take about 3 minutes.

3.) Add clams and butter to skillet and cover (if you don’t have a lid that fits, use a sheet of foil). Cook until clams have opened, 6–10 minutes, depending on size of clams and heat level. Remove skillet from grill; discard any clams that don’t open. Sprinkle with chives.

4.) Meanwhile, drizzle bread with remaining 3 Tbsp. oil and season lightly with salt. Grill until golden brown and crisp, about 3 minutes per side.

5.) Serve clams with toasted bread and reserved garlic mayo. Enjoy!

This is most likely a new way for you to prepare your clams, but I wanted to bring something new to your mind to think about next time you have clams to cook up! This recipe may take some time, but I have no doubt the end result would be worth it. This recipe is full of different flavors that will satisfy your seafood craving! Chocolate Raspberry Pie Recipe!

Mother’s day is just around the corner! When thinking about what to write about before Mothers day I thought a new pie recipe could be a fun idea! Maybe you as a reader want to make up this delicious pie for your Mom and treat her to something sweet, or perhaps you are the Mom who is still in charge of making dinner and dessert despite the fact that it is Mothers day. Well, no matter what circumstance you find yourself in, this pie is worth trying weather you make it yourself or share it with someone you care about. Chocolate Raspberry Pie

A Taste of Home recipe and photo brought to you by Miller’s Meat Market.

This pie only takes about 30 minutes to prepare.

Here is what you will need-

Ingredients:

Dough for a single pie crust

3 tablespoons sugar

1 tablespoon cornstarch

2 cups fresh or frozen unsweetened raspberries, thawed

For the Filling:

1 package (8oz) cream cheese, softened

1/3 cup sugar

1/2 teaspoon vanilla extract

1/2 cup heavy whipping cream, whipped

For the Topping:

2 oz semi-sweet chocolate

3 tablespoons butter

Directions:

1.) Once you have gathered all your ingredients, preheat the oven to 450 degrees. On a lightly floured surface, roll your pie dough into and 1/8 inch thick circle and transfer into a 9 inch pie plate. Trim around the pie plate so there is just a 1/2 of extra dough beyond the rim. Proceed to flute the edge, then refrigerate the dough for 30 minutes.

2.) Once the 30 minutes is up, bake your crust on the lower oven rack until golden brown. Let it cool on a wire rack.

3.) While your crust is cooling, combine sugar and cornstarch into a large saucepan. Stir in raspberries, and bring to a boil over medium heat. Boil and stir for 2 minutes. Then remove it from the heat, and allow it to cool off for about 15 minutes. Once it is cooled off, spread it into the crust and refrigerate.

4.) In a large bowl, beat together the cream cheese, sugar and vanilla until fluffy. Then, fold in the whipped cream. Carefully spread this mixture over the raspberry layer. Cover and refrigerate for at least one hour.

5.) In a microwave, melt chocolate and butter, and stir it until smooth. Let that cool for 3-5 minutes before pouring it over the filling. Cover and refrigerate for at least 2 hours, and continue to store it in the refrigerator if you have leftovers.

Finally, enjoy it! Specifically if you are a mother, even if you made this dessert yourself, its time to sit back and enjoy this sweet pie! You deserve it! Once you have tried it yourself you may not want to share, but nonetheless I encourage you to tell all your mom friends to give it a try themselves. Raspberry and chocolate, truly a heavenly combination! Also, if you don’t have ingredients for a dough crust, try this recipe out with a graham cracker crust, or chocolate crumb crust! Put your own special twist on this delicious recipe.
